Panqueques y jalea de moras / Mulberry pancakes and syrup

Panqueques es una de esas comidas que mi mamá aprendió a hacer de unas señoras norteamericanas que vivían cerca de casa. La forma que le enseñaron era batiendo las claras a punto nieve y luego mezclando eso con el resto de la masa dando como resultado un panqueque muy esponjoso. Y así es como crecí comiéndolos. Luego me casé y como no sabía nada de la cocina, mi esposo era el que preparaba los panqueques. A él le gustaban los panqueques más chatos, no tan altos y esponjosos como los que yo solía comer. Tenía su receta favorita que llevaba leche de mantequilla (buttermilk), pero es algo que no se encuentra muy fácilmente en Paraguay, entonces usaba leche cortada. Como nunca había tenido uno hecho con la leche de mantequilla, no tenía con qué compararlos, hasta que fuimos a Estados Unidos y pude probar un panqueque hecho con el ingrediente que nos faltaba. Son panqueques esponjosos, pero a la vez, diferentes a los que se hacen con la clara de huevo batida. Me encantaron, y hasta ahora son mis favoritos! también es una cosa menos para hacer, nada de separar las claras y batirlas aparte. Estos panqueques son fáciles de hacer. Si los hago para el desayuno, la noche antes mezclo todos los ingredientes secos en una fuente y los líquidos en otro y al próximo día es sólo mezclar y cocinar. Así de fácil! Pero todavía tenemos el misterio de esta leche de mantequilla que no se encuentra en cualquier supermercado. Después de las indicaciones de la receta pueden encontrar los trucos que he aprendido durante mis años haciendo panqueques. 
Estos panqueques los hice con moras congeladas. Me parece que la mora congelada explota con más sabor cuando se la cocina así, pero esa es sólo mi opinión, pueden usar frescas también. La canela le complementa muy bien, parece que estas comiendo algún postre para el desayuno :) aunque pronto deseo probar estos panqueques de mora con un poco de ralladura de naranja.
Para hacer la jalea usé moras frescas, recién cosechadas. Al licuar toda la fruta, no necesitas sacar el tallo verde que tienen y que lleva mucho tiempo quitar. Es una jalea simple de sólo moras y azúcar, pero que queda perfecta con los panqueques y ese toque de canela.
Qué otros trucos tienen para panqueques esponjosos? Qué otro ingrediente iría bien con las moras?

 Pancakes are one of those foods that my mom learned to make from some American ladies who lived in our neighborhood. They tought her to whip the eggs whites before mixing it with the batter which makes very fluffy pancakes. And that's how I grew up eating them. Then I got married, and since I didn´t know how to make anything, my husband was the one who made pancakes. His pancakes were a little bit flat and not as fluffy as the ones I used to eat. His favorite recipe had buttermilk, an ingredient that is not very common in Paraguay, so he used sour milk. Since I had never had pancakes made with buttermilk, I had nothing to compare them to, until we went to the United States and had a chance to try them with the right ingredient. The pancakes were fluffy, but at the same time different from those made with whipped egg whites. I liked them better than the ones my mom made, and they´re still my favorites! Of course, I like them better because is less work, no separating egg whites and beating them apart. When I make them for breakfast: the night before I mix all the dry ingredients in a bowl and the liquid ingredients in another bowl, the next morning I just mix the batter and cook them. That easy! But we still have the mystery of this buttermilk which is very hard to find in the supermarkets here.
After the recipe I wrote some of the tricks I've learned during my years of making pancakes.
I made these pancakes with frozen mulberries. I love how the berries burst with flavor when cooked that way, but you can use fresh mulberries too. The cinnamon in the batter adds a nice touch, it´s more like having dessert for breakfast :) next time I want to try them with some orange zest.
For the syrup I used fresh mulberries. I blended the whole thing, fruit and stem. It makes it less time consuming. It´s a very simple syrup, some mulberries and sugar, but perfect with these yummy pancakes.

Receta:

Para la jalea:

1-1/2 tazas de moras (167gr./5.9oz.)
1 taza de azúcar (200gr./7.05oz.)

Masa para panqueques:

1 taza de harina (125gr./4.41oz.)
1 cucharita de polvo de hornear
1/4 cucharita de bicarbonato de sodio
1/4 cucharita de sal
1 cucharita de canela
1 cuchara de azúcar
1/2 taza de yogurt natural (118ml./4oz.fl.)
3/4 taza de leche (177ml./6oz.fl.)
2 cucharas de aceite vegetal
1 cucharita de vainilla
1 huevo, batido 
1 taza de moras
2 a 3 cucharitas de mantequilla

1. Poner las moras y el azúcar en una licuadora y licuar por 1 minutos. Derramar la mezcla en una cacerola pequeña y una vez hirviendo, hervir a fuego fuerte por 3 minutos. Dejar enfriar.

2. En un bol grande, poner la harina, el polvo de hornear, el bicarbonato de sodio, la sal, el azúcar y la canela. Añadir los ingredientes líquidos y mezclar sólo hasta que este incorporado. Añadir las moras y mezclar despacio con una espátula.

3. Calentar el sarten a fuego medio. Cuando este caliente poner una cucharita de mantequilla y derramar un cuarto de taza de la masa de panqueques. Cocinar por 1 minuto o hasta que haya burbujas en la superficie de encima. Dar la vuelta al panqueque y cocinar por 1 minuto a un minuto y medio.

4. Sacar del fuego y seguir hasta que se termine la masa. Servir con la jalea de moras. 

Algunos trucos:
*Usar un poco de yogurt natural junto con la leche: he probado todo yogurt y salen muy pesados, o sólo leche y salen muy planos, no muy esponjosos. *Usar un poco de bicarbonato de sodio, este reacciona con el yogurt y te da ese panqueque esponjoso que quieres. *Mezclar despacio la masa, sólo hasta que se mezcle todo. Si bates mucho, las burbujas de aire explotan antes de cocinarlo y terminas con un panqueque pesado. *Por último, usar mantequilla para cocinarlos. Hace que las orillas de los panqueques salgan crujientes.

Recipe:

Syrup:


1-1/2 cups mulberries (167gr./5.9oz.)
1 cup sugar (200gr./7.05oz.)

Pancake batter:

1 cup flour (125gr./4.41oz.)
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon

1 tablespoon sugar
1/2 cup plain yogurt (118ml./4oz.fl.)
3/4 cup milk (177ml./6oz.fl.)
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1 egg, beaten
1 cup mulberries

2 to 3 teaspoons of butter

1. Add the berries and sugar into a blender and blend for 1 minute. Pour the mixture into a small saucepan and bring to boil; boil over high heat for 3 minutes. Set aside.


2. In a large bowl, mix the flour, baking powder, baking soda, salt, sugar and cinnamon. Add the liquid ingredients and mix just until well combined. Add the mulberries and mix gently with a spatula.


3. Heat a skillet over medium heat. When hot, add a teaspoon of butter and pour a quarter cup of pancake batter. Cook for 1 minute or until you see little bubbles on the surface. Turn the pancake and cook for 1 minute to a minute and a half.

4. Remove from heat and continue until the batter is finished. Serve with
mulberry syrup. 


Some tricks:
*Use some plain yogurt with milk: I've tried using just yogurt, but the pancakes were too heavy (not light and fluffy) and I´ve tried with just mi
lk, but they were still too flat. *Use a little baking soda, this reacts with the yogurt creating little air pockets and gives you the fluffy pancake you want. *Don´t over mix the batter, you´ll break those little air pockets. *Finally, use butter for cooking the pancakes. It gives you delicious crispy edges.
