Cupcakes de piña / Pineapple cupcakes



Esta es mi receta favorita de torta de vainilla. Muy fácil de variar los sabores y lo que me gusta más, es que lleva aceite en vez de mantequilla. La mantequilla es más cara y no siempre se encuentra en nuestro supermercado. Desde que encontré esta receta, ya no he buscado otra.

Quería que la masa tenga sabor a piña, así que le añadí un poco de jugo en polvo. El jugo que yo puedo conseguir ya tiene azúcar. Si ustedes pueden conseguir otro que solo tiene el sabor, creo que sería mejor usar ese. Si pueden encontrar esencia de piña, pueden omitir el jugo y poner una cucharita de la esencia.

En el medio del cupcake hay tipo una mermelada de piña. Yo corté piña en pedacitos chicos y lo cociné con un poco de azúcar negra (1 taza de piña y 1 taza de azúcar negra), dejé enfriar y luego use para los cupcakes.

Estos cupcakes fueron un éxito total! Todos mis invitados dijeron que estaban riquísimos! Por su puesto, eso me puso muy contenta :)

La próxima semana es el día de las madres acá en Paraguay, y pienso que sería el postre perfecto para llevar a la casa de tu mami.

This is my favorite vanilla cake recipe. Very easy to vary the flavors and what I like most, is that it uses oil instead of butter. Butter is more expensive and not always available in our supermarket. Since I found this recipe, I have not look for another one.
I wanted the cake to have a pineapple flavor, so I added some powder juice. The juice that I can get here has sugar. If you can get one that´s only flavor, use that one. If you can find pineapple extract, omit the juice and add a teaspoon of the extract.
I added a little bit of pineapple jam in the center of the cupcake. I cut up some pineapple and cooked it with brown sugar (1 cup pineapple and 1 cup brown sugar), let it cool and then use it to fill the cupcakes.
These cupcakes were a success! All my guests said they were very delicious! Of course, that made me very happy
:)

Next week is Mother's Day here in Paraguay, and I think that would be the perfect dessert to take home to your mom.

Receta:

2-1/2 tazas de harina

2 tazas de azúcar

1 taza de leche

3/4 taza de aceite vegetal

4 huevos

2-1/4 cucharitas de polvo de hornear (Royal)

1 cucharita de vainilla líquida

Preparación:

En una fuente grande, batir con batidora eléctrica, el azúcar y los huevos por 5 minutos. Añadir la harina, el aceite, el polvo de hornear, y la vainilla y batir por 1 minuto más, sólo hasta que esté todo mezclado y cremoso. No sobre batir. Llenar los moldes de cupcakes ya engrasados, hasta la mitad; poner 1 cucharita de mermelada encima. Cubrir la mermelada con suficiente masa hasta llenar tres-cuartos del molde.

Hornear por 25-30 minutos o hasta que el centro esté cocinado. Dejar enfriar completamente antes de decorar, si se desea.
Decorado:
2 paquetes de queso crema de 200 gm (el que esta en la foto es muy líquido, yo tuve que usar muuucha más azúcar impalpable para tener una cosistencia buena. Es mejor usar el queso crema más duro, tipo el americano)
1 taza de azúcar impalpable
1 cucharita de vainilla líquida
1 cucharita de extracto de coco (mi vainilla es de República Dominicana y tiene un sabor a coco, asi que no tuve que añadir esto)
1-1/3 taza de crema para batir, bien fría
1/4 taza de coco rallado y tostado
En una fuente grande, batir el queso crema hasta que esté cremoso. Añadir el azúcar impalpable y los extractos y batir bien. Mientras se sigue batiendo, derramar la crema de leche de a poco y batir hasta que esté espeso.
Poner en una bolsa para decorar.


What you'll need

2-1/2 cups all-purpose flour

2 cups sugar

1 cup milk

3/4 cup vegetable oil

4 eggs

2-1/4 teaspoons baking powder

1 teaspoon vanilla

How to make it

Preheat oven to 350° F.

In a large mixing bowl, with an electric mixer, beat sugar and eggs together for about 5 minutes. Add flour, milk, oil, baking powder, and vanilla and beat for another minute, just until the batter is smooth and creamy. Don't overbeat. Fill greased or paper-lined muffin cups half full; place 1 teaspoon jam on top. Cover jam with enough batter to fill muffin cups three-fourth full.

Bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely before covering with frosting, if desired.
For the frosting:
2 (8-oz.) packages cream cheese, at room temperature
1 cup powdered sugar
1 teaspoon vanilla extract
1 teaspoon coconut extract (my vanilla extract is from DR and has a coconut flavor too, so I just used that one)
1 1/3 cups cold heavy whipping cream 
In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese until smooth. Sift the powdered sugar into the bowl, beating to combine, then add the extracts. Remove the paddle attachment and attach the whisk attachment. Scrape down any cream cheese from the sides of the bowl, and then with the whisk beating at medium-high speed, stream in the cold heavy cream until the frosting is thick enough to pipe.
Transfer the frosting to a piping bag fitted with your desired pastry tip. Pipe the frosting onto the cooled cupcakes and serve immediately.
