Todo lo que sé sobre
“canning” (cómo sellar frascos-muy largo en español :), lo aprendí en éste libro. Hasta ahora sólo lo he hecho
con mermeladas, salsa de tomates y puré de manzana. El proceso para sellar
éstos es más fácil que sellar frascos con verduras que no tienen mucho ácido
(para eso se necesita una olla a presión especial).
He usado frascos que
compré en Estados Unidos, que son especiales para “canning” y cuando se me
terminaron empecé a usar los frascos usados de mermeladas que
teníamos del
supermercado. Hasta ahora han sellado bien. En Paraguay están vendiendo frascos
nuevos, pero hasta ahora no he ido a comprarlos, espero ir pronto a ver, y el
precio que me dieron no estaba mal.

Everything
I know about canning I have learned
from this book. Up until now, I´ve only canned jams,
spaghetti sauce,
and
applesauce. The process of canning these kinds of foods is much easier than canning food without
much acid (for this you´ll need a pressure canning pot).
I´ve used
jars from the States, that are made especially for canning but when I started using used-jars that we bought from the store here in Paraguay with
jam, those worked too. Now there is a place in Paraguay where you can buy new jars, but I haven´t been there yet. Hopefully, I´ll be able to go there soon, and the price that they gave wasn´t too bad.

Lo que necesitan:
Una olla alta
Una parrillita (yo uso una que viene en un sartén para cocinar a
vapor)
Pinzas largas (yo tengo una especial que compré en USA)
Un embudo
Una olla chica para hervir las tapas
Toalla o una tabla para cortar verduras de madera (el vidrio
caliente no se debe poner en cualquier lugar porque es muy fácil de romper)
Un reloj para controlar el tiempo
What you
will need:
A big pot
A rack (I
use one that comes in a pot for steam cooking)
A large
tongs for lifting out the jars (I got mine in the States)
A funnel
A small pot for boiling the lids
Towel or a
wooden cutting board (you shouldn’t put hot jars on just any surface, they break easily)
A timer
Lavar los frascos y las tapas con jabón y agua caliente. Dejar escurrir, no secar.
Wash the
jars and lids with hot, soapy water. You don´t need to dry them.
Poner la parrilla en la olla y poner los frascos. Llenar los
frascos y la olla con agua y hervir a fuego lento. No se necesita hervir por
mucho tiempo. Mantener los frascos calientes.
Put the
rack in the pot, and add the jars. Add water to the jars and the pot until it
reaches the top of the jars. Cover and bring the water to a simmer over medium
heat. Keep jars hot.
En otra olla pequeña poner las tapas y suficiente agua para
cubrirlas y hervirlas también.
In another
pot, add the lids and enough water to
cover them and bring them to a simmer over medium heat.
Preparar la mermelada.
Trabajando con un frasco a la vez, sacar el frasco de la olla,
derramando el agua caliente devuelta a la olla. Poner el frasco en una toalla o
tabla de madera. Llenar el frasco caliente con mermelada. Limpiar las orillas
del frasco. Sacar una tapa y tapar el frasco.
Working
with one jar at a time, remove a jar from the pot, pouring the hot water back into pot. Place the jar
on a towel or the wooden cutting board. Ladle the prepared jam into the hot jar. Wipe jar rim. Take one
lid from water and screw it on the jar.
Poner el frasco nuevamente en la olla llena de agua caliente. Repetir
hasta que todos los frascos estén llenos.
Return jar
to the rack in the hot water-filled pot. Repeat filling steps until all jars are
filled.
Cuando todos los frascos estén en la olla de agua caliente,
ajuste el nivel del agua, debe cubrir los frascos por lo menos unos 2.5 cm – 1
pulgada. Tapar la olla y hacer hervir en fuego alto. Cuando empieza a hervir
continuadamente, calcular 10 minutos. Apagar y dejar los frascos en el agua por
5 minutos.
When all
of the jars are in the pot, adjust the water level in the pot so that it covers
the jars by at least 1 inch. Cover the pot with a lid and bring water to a full
boil over high heat. Once the water is boiling hard and continuously, time it
for 10 minutes. Turn the heat off and let the pot cool for 5 minutes.
Después de los 5 minutos, sacar los frascos del agua caliente
sin volcarlos (no se preocupen por el agua encima de las tapas, se va a
evaporar enseguida) y colocarlos en la toalla para que enfríen. Necesitan
enfriar por 24 horas sin tocarlos para que puedan sellar bien.
After 5
minutes, remove the jars, lifting them out of the hot water without tilting
them (don´t worry about water on the tops of the jar lids, it will evaporate
soon) and place them on a towel and let them cool. They need to cool down for
24 hours without disturbing so they can seal properly.
Cómo saber si los frascos han sellado apropiadamente: la tapa de
un frasco bien sellado está hundida, al presionar con el dedo el centro de la
tapa, no debe moverse. Guardar frascos en un lugar fresco y
oscuro.
How do you
know if the jars are sealed properly: the lid should be
down very tight and will show no movement when pressed. Store sealed jars in a cool,
dark place.
