Hace poco encontré ésta receta, no pensaba ponerla en el blog,
pero después de comerla pensé que debía compartirla con todos ustedes, por eso
no hay fotos de cada paso ésta vez.
La receta pide crema de leche, y como van a ver en la foto de
los ingredientes, yo usé crema “chantillí”.
Hace algunas semanas una amiga me contó que ella usa ésta crema
para decorar tortas (ella vende tortas). Compré para probar y la usé para éste
mousse. Salió muy rico, y se sentía menos
grasoso. Me parece una buena idea
tener ésta crema a mano para los que vivimos en el campo y no tenemos acceso
fácil a la crema fresca.
I found this recipe just
a few weeks ago and wasn´t planning on posting it on this blog, but after
trying it I thought I should share it with you all, but that is why there are
no step by step pictures this time.
The recipe calls for
heavy cream, and as you can see on the picture, I used “chantilli” cream.
A few weeks ago a friend
told me she uses this “chantilli” to decorate her cakes (she sells cakes). I
bought it to try it and used it for this mousse. It turned out very yummy, and
less greasy. I think it´s a good idea for people like us who live out in the
country with no access to fresh cream, to have a few packages of this
“chantilli” on hand.
Aceite en spray
7 galletitas cuadradas (yo tenía un poco de galletitas
americanas, pero se puede usar cualquier galletita dulce sin relleno)
3 Cucharas de jugo de limón
2-1/4 cucharitas de gelatina en polvo sin sabor
5 tazas de frambuesas frescas*
1/2 taza + 2 Cucharas de azúcar
2 tazas de crema de leche para batir
*yo usé sólo 1-1/2 tazas de fruta, porque no quería colarla. Se
puede usar cualquier tipo de fruta. Sólo necesitas 1 taza de puré de fruta
Nonstick cooking spray
7 graham crackers
3 tablespoons fresh
lemon juice
2 1/4 teaspoons powdered
gelatin (from one 1/4-ounce packet)
5 cups fresh raspberries
(about 1 1/2 pounds) (I used only 1-1/2 cups because I didn´t strain them)
1/2 cup plus 2
tablespoons sugar
2 cups cold heavy cream
Engrasar un molde cuadrado de 9 pulgadas y
poner papel manteca, dejando que sobresalgan las puntas del molde. Poner las
galletitas en el molde, rompiéndolas para que cubran toda la superficie.
Vierta el jugo de limón en un tazón pequeño y espolvorear con gelatina. Deje reposar hasta que la gelatina se ablanda, 3 minutos. En una licuadora, mezcle 2 tazas de frambuesas hasta que quede suave, raspando el tazón según sea necesario. Vierta el puré en un tamiz de malla fina en un vaso medidor, presionando en los sólidos (usted debe tener aproximadamente 1 taza de puré), tirar los sólidos.
En una cacerola pequeña, combine el puré de frambuesa y 1/2 taza de azúcar a fuego medio. Cocine hasta que las burbujas se formen en el borde. Agregue la mezcla de gelatina y cocine, revolviendo constantemente, hasta que la gelatina se disuelva, aproximadamente 1 minuto. Transfiera la mezcla a un tazón pequeño y deje enfriar a temperatura ambiente, a 20 minutos. En un tazón grande, usando una batidora eléctrica, batir la crema y 2 cucharadas de azúcar a fuego medio-alto hasta que se formen picos firmes, unos 4 minutos. Con una espátula de goma, mezclar con el puré de frambuesa. Verter sobre las galletitas. Refrigere hasta que esté firme, aproximadamente 2 horas (o durante toda la noche).
Usando el papel manteca, levante suavemente el mousse y coloque en un plato para servir. Despegue el papel.
Cortar en 12 piezas para servir.
Lightly coat a 9-inch
square metal baking pan with cooking spray and line with parchment paper,
leaving a 2-inch overhang on all sides. Arrange graham crackers in an even
layer in pan, breaking them to fit as necessary. Place lemon juice in a small
bowl and sprinkle with gelatin. Let sit until gelatin softens, 3 minutes. In a
blender, puree 2 cups raspberries until smooth, scraping down bowl as needed.
Pour through a fine-mesh sieve into a measuring cup, pressing on solids (you
should have about 1 cup of puree); discard solids.
In a small saucepan, combine
raspberry puree and 1/2 cup sugar over medium. Cook until bubbles form at edge.
Add gelatin mixture and cook, stirring constantly, just until gelatin
dissolves, about 1 minute. Transfer mixture to a small bowl and let cool to
room temperature, 20 minutes. In a large bowl, using an electric mixer, beat
cream and 2 tablespoons sugar on medium-high until firm peaks form, about 4
minutes. With a rubber spatula, gently fold in raspberry puree mixture until
combined. Pour over graham crackers. Smooth top with an offset spatula and
arrange 3 cups raspberries on top. Refrigerate until set, about 2 hours (or up
to overnight).
Using parchment, gently
lift pie out of pan and place on a serving plate. Peel away parchment from
sides of pie; trim excess paper with scissors or a sharp knife. Cut
into 12 pieces to serve.
