Cuñapé frito / Fried cuñapé



 Libro de cocina, doña Piedades. Mi mamá me regaló éste libro cuando me casé. Tiene recetas bolivianas y de otros lugares. Fue mi primer libro de cocina. Me imagino que me lo dio porque sabía que yo no tenía ni idea de cómo cocinar, ya que nunca le hice caso de aprender cuando ella me quizo enseñar. Y de ahí saqué la receta de hoy.
Hay tres formas de preparar el cuñapé; al horno, frito y abizcochado, que es al horno
también, pero quedan súper duros que tieness que meterlo en tu café para poder comerlo :).
Ya les mostré cómo preparar el cuñapé al horno, y lleva casi los mismos ingredientes. Los ingredientes principales son el almidón de yuca/cassava/mandioca y queso. Se pueden variar las formas que se le da antes de freírlos. Lo más fácil es hacer una cuerdita y cortarlos en pedacitos chicos. También se puede sacar con cucharitas y hacer bolitas pero bien chicas, o se puede hacer una argolla fina. Espero que les guste!
Libro de cocina, doña Piedades. My mom gave me this cookbook when I got married. It has Bolivian recipes and some from other places too. This was my very first cookbook. I guess she gave it to me because she knew I had no idea how to cook, since I never paid much attention when she tried to teach me. I got this recipe from this cookbook.
There are three ways you can make cuñapé: baked, fried, and twice baked “abizcochado”, but this way it´s too hard, and you have to soak it in your coffee :)
I´ve already shown you how to make baked cuñapé, and this one has almost the same ingredients. The ingredients are manioc/cassava/yucca flour or starch and cheese. They can be made in different shapes. The easiest way is to make a rope and cut them in little pieces. You can also make little balls with a spoon, or make a ring. I hope you enjoy it!

Ingridients





2 tazas de queso rallado
2 tazas de almidón de mandioca/yuca/cassava
1 cuchara de azúcar
2 cucharitas de polvo de hornear
2 huevo
1 cucharita de sal
1 cuchara + 1 cucharita de leche
Aceite para fritar
2 cups shredded cheese
2 cups manioc/cassava/yucca flour/starch
1 tablespoon sugar
2 teaspoons baking powder
2 eggs
1 teaspoon salt
1 tablespoon + 1 teaspoon milk
Oil for frying





 
En una fuente mezclar todos los ingredientes y formar una bola.
In a bowl, mix all the ingredients and make a ball.







Dar forma al cuñapé. Para hacer argollas: separar la masa en 10 bolitas; amasar cada bolita por unos 20 segundos antes de hacer una cuerda y juntarla. O con una cucharita sacar un poquito de masa y hacer bolitas. Tienen que ser pequeñas para que se puedan cocinar completamente. Se hinchan mucho.
If you want to make a ring, divide the dough into 10 balls; knead each ball for about 20 seconds before making a rope, then stick the ends together. Or with a teaspoon make little balls. They should be small so they´ll cook all the way thru. They grow double their size. 





Calentar el aceite a fuego medio. Si está muy caliente el aceite, el cuñapé explota y el aceite te quema, lo que me pasó ayer :(
Heat the oil on medium. If the oil is too hot, the cuñapé can explode and you can get burned by the oil, which happened to me yesterday :(


Freírlos hasta que se doren.
Fry them until golden.






 
Sacar y poner en una toalla de papel.
Remove the cuñapé to a cooling rack set over paper towels to remove excess oil before serving.
Servir con té o café caliente.
Serve with hot tea or coffee.
