Cuñapé al horno / Baked Cuñapé / pan boliviano / bolivian bread


Esta receta es un pan boliviano. Sus ingredientes principales son el almidón de mandioca/yuca/casava y queso. Muchos países latinos tienen una forma diferente de prepararlo. Acá en Paraguay se llama chipa, y tiene un poco de harina de maíz. En Brazil es pan de queso, y lo diferente a esta receta, es que usa queso parmesano y la masa se cocina en la estufa primero. También en otros países se llama pan de yuca.
En Bolivia este pan se come para el desayuno o a la hora de la merienda. Generalmente se compra en las panaderías, pero algunas personas todavía hacen en sus casas.
Cuando nos mudamos a Paraguay, mi mamá trató de hacer cuñapé, y muchas veces se hinchaban en el horno y a los minutos fuera del horno, se bajaban otra vez. Por muchos años intentó hacerlo y siempre se bajaban. Ahora que ella vive en Bolivia, le pidió la receta a otra señora y ésta sí funcionó.
El queso en Bolivia es más seco que el queso en Paraguay (que se llama 'queso paraguay') y mucho más salado. Creo que el queso tiene mucha influencia en cómo sale. Con queso paraguay sale rico, pero no igual al de Bolivia.

This is a Bolivian bread. The main ingredients are mandioc/yucca/cassava starch and cheese. Many South American countries have their own way of making this bread. In Paraguay we have chipa, and this has some cornmeal too. In Brazil they call it cheese bread and the difference is that it has Parmesan cheese and the dough is cooked on the stove first. And in other countries it is called yuca bread.
In Bolivia we eat this for breakfast or for merienda (snack at around 3 or 4 pm, with coffee or tea). Usually people buy it from bakeries, although there are some people that still make it at home.
When my family moved from Bolivia to Paraguay, my mom tried to make cuñapé. The cuñapés would puff up in the oven and after removing them they would go flat. For many years she tried to make them and almost always they went flat. Now that they are back in Bolivia, my mom asked a lady for the recipe. And this one works.
The cheese in Bolivia is drier than Paraguayan cheese and much more salty. I think the cheese has a big influence on how it turns out. With Paraguayan cheese it's good, but the flavor is different than the Bolivian cuñapé
.



Cuñapé al horno / Baked Cuñapé / pan boliviano / bolivian bread

1/2 kilo (4 tazas) de almidón
1/2 kilo (4 tazas) de queso paraguay o cualquier queso seco. (El cuñapé sale más rico si pones el doble de queso, o sea 8 tazas)
2 huevos.
3 cucharadas de manteca.
1/2 cuchara de sal (esto depende qué tan salado es el queso que usan, si usan queso Py, está bien, pero si usan otra clase, poner menos, tal vez 1/2 cucharita)
8 cucharas (1/2 taza) de leche


1/2 kilo (4 cups) cassava flour
1/2 kilo (4 cups) shredded cheese (in the US I used mozzarella) (for a more delicious cuñapé use 8 cups of cheese)
2 eggs
3 Tablespoons butter

1/2 Tablespoon salt (depending how salty the cheese you are using is, you use more or less salt. This amount is for Paraguayan cheese, if you use another kind, use less salt, maybe 1/2 teaspoon)
8 Tablespoons (1/2 cup) milk

En una fuente grande, poner todos los ingredientes y mezclar hasta obtener una masa homogénea. Amasar por 2 a 3 minutos.

In a big bowl, mix all the ingredients. Knead the dough for 2-3 minutes.

Dividir la masa en 24 porciones iguales. Hacer bolitas con cada porción y ponerlas en una bandeja enmantecada.
Hornear por 20 minutos en horno bien caliente, 500 F° / 250-275 C°.


Divide the dough into 24 equal portions. Make a round ball with each portions and place them on a greased baking sheet.
Bake for 20 minutes in a very hot oven, 500 F° / 250-275 C°.

Los cuñapé se deben de servir calientes. Pierden su textura al próximo día. Servir con café.

Serve cuñapé while it´s still hot. They´re not as yummy the next day. Enjoy it with some coffee.
